Who says mimosas are only for the summer? Serve this festive and seasonal version at your next holiday party or festive winter brunch to add a beautiful pop of color to the table. The green tea is subtle but adds a refreshing and different flair that is unique compared to the original mimosa. The bobbing fruit is also fun and cheerful for the holidays. Merry mimosas, everyone!

Makes 8 glasses // Prep Time: 10 minutes // Active Time: 5 minutes
- 1 cup filtered water
- 2 rounded tsp loose leaf or 2 sachets/bags green tea. We recommend The Sanguine Strawberry by Tea Goblin.
- 1/2 cup pomegranate juice
- 2 apples, roughly chopped
- 1 cup whole fresh cranberries
- 1 cup green grapes, halved
- 1 cup pomegranate seeds
- 1 750ml bottle of champagne or Prosecco
- Rosemary sprigs for garnish
Heat the water to 175°F and steep green tea for 2-3 minutes. Remove (strain) tea and sweeten to taste with honey, sugar, agave syrup, or maple syrup. Add in a few ice cubes and set aside to cool (about 5 minutes).
In a large pitcher or punch bowl, add in the all fruit. Pour in the green tea, pomegranate juice, and champagne or prosecco just before serving. You can even make it more bubbly by topping with sparkling water or club soda! Garnish with rosemary sprigs and enjoy!
