Vegan? Non-dairy? Gluten-free? No problem! This sweet and satisfying 'nice' cream meets all of the requirements - and who knew frozen banana could be so creamy? Blended with Pinky Up Coconut Creme, this sweet treat is fresh, healthy, and deliciously tropical.
Coconut Banana Nice Cream
Makes 2 servings
Ingredients
- 2 tsp Pinky Up Coconut Creme
- 1 cup water
- 2 ripe bananas, peeled and frozen overnight
- 1/4 cup full fat coconut milk
- 2 tbsp coconut flakes
Directions
Peel and freeze 2 large, ripe bananas for at least 4 hours, but ideally overnight.
Using 2 tsp of tea leaves, brew 1 cup of Pinky Up Coconut Creme, strain, and let cool. Reserve 1/4 cup of the tea to use for this recipe (drink the rest!).
Add the frozen bananas and 1/4 cup of brewed tea to a blender or food processor. Blend until the mixture becomes thick, smooth, and creamy. Transfer this mixture to a medium bowl and gently fold in the coconut milk and flakes.
Once you've folded all of the ingredients in, the nice cream will be the texture of soft serve. You can serve it as is, or you can transfer it to an airtight, freezer-safe container and place it in the freezer to achieve a firmer texture. Enjoy!
