Cucumber Mint Popsicles

This is the most hydrating and refreshing dessert you will have ever tasted! These crisp popsicles are made with fresh mint, juicy cucumbers, and rejuvenating Rishi Maghreb Mint green tea. Lightly sweet and majorly yummy - give these pops a go!

Cucumber Mint Popsicles

Makes 10 popsicles

Ingredients

Popsicles

  • 1 Tbsp Rishi Maghreb Mint
  • 1 cup water
  • 1/2 cup mint simple syrup
  • 3 tsp freshly squeezed lime juice
  • 1.5 lbs (24 oz.) cucumbers, peeled and roughly chopped

Mint Simple Syrup

  • 1/2 cup water
  • 1/2 cup sugar
  • 4 large sprigs fresh mint

Directions

To make the mint simple syrup, combine the sugar and water in a small saucepan and bring to a boil. When the sugar is dissolved, remove from heat and stir in the mint sprigs. Let the mixture steep until it cools to room temperature. Strain out the mint and store the syrup in a glass jar in the fridge.

You will likely end up with a little more syrup than you need for this recipe. Feel free to add more or less syrup depending on how sweet you want your popsicles to be!

To make the popsicles, first brew 1 cup of Rishi Maghreb Mint. Add the brewed tea, mint simple syrup, lime juice, and cucumbers to a blender and pulse until very smooth. Pour the mixture into your popsicle molds and freeze for 4-6 hours, or until frozen solid. Enjoy!
