These delicious Coconut Chai Popsicles are reminiscent of Kulfi, a traditional Indian ice cream. The aromatic spices in Rishi Masala Chai and the creaminess of the coconut milk make for a rich, creamy, and sensory popsicle experience.

Coconut Chai Popsicles

Makes 6 popsicles

Ingredients

  • 1 Tbsp Rishi Masala Chai
  • 1 cup water/milk/non-dairy milk
  • 1/2 cup full fat coconut milk
  • 2 tbsp maple syrup

Directions

Brew 1 cup of Rishi Masala Chai using a cup of water or any kind of milk. Traditionally, masala chai is steeped directly in cow's milk and this can help to give the popsicles a creamier texture, but feel free to use whatever you like to brew the tea!

Strain the tea and combine with the coconut milk and maple syrup. Mix well and pour the mixture into your popsicle molds.

Freeze the popsicles for at least four hours, or until completely set. Enjoy!
