Wuyi Oolong Lamb

Calling all lamb lovers! This is a simple, hearty, and delicious dish with subtle tea undertones. Nazanin from Tea Thoughts used a White2Tea Clover Patch marinade to infuse the flavor into the meat. The tea's floral fragrance and spices like turmeric and dill complement the lamb's rich taste and texture.

Wuyi Oolong Lamb

Ingredients

  • 3 tsp white2Tea Clover Patch
  • 3 cups water
  • 1 tsp turmeric 
  • 1 tbsp dill
  • 1 tsp freshly grated ginger
  • 1 tbsp minced garlic
  • 2 lamb shoulder chops
  • salt
  • pepper

Directions

Preheat oven to 350°F. Brew the tea in 3 cups of water. Steep for 3 minutes and then pour the tea into a container large enough to be a marinating dish (preferably with a lid). Let the tea cool. 

Add into the container the turmeric, garlic, ginger, dill, and your preferred amounts of salt and pepper to taste. Add the lamb shoulder chops to the marinade and spoon the mixture over the meat. Marinate for 3-6 hours in the fridge, turning over the meat halfway through. 

Bake in the oven for 15-18 minutes, depending on how rare you prefer the lamb to be. Serve with rice and vegetables. Enjoy!
