White Chocolate Matcha Cups

Sink your teeth into one of these festive treats! These sweet, fudgy cups are delightfully flavorful, and since they're made with matcha, they'll give you a burst of energy. As a bonus, their red and green color scheme comes from matcha and raspberry and is naturally holiday themed - nothing artificial here!

White Chocolate Matcha Cups

Makes about 7 cups

Ingredients

White Chocolate Crust

  • 2 tsp matcha powder
  • 1 1/4 cups raw cacao butter, melted
  • 1/4 cup + 2 tbsp raw cashew butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • pinch salt

Raspberry Jam

  • 1/2 cup fresh raspberries
  • 1 1/2 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1 tsp lemon juice
  • 2 tbsp maple syrup
  • A pinch of salt

Directions

To make the jam, add the raspberries, chia seeds, vanilla extract, lemon juice, maple syrup, and salt to a food processor and pulse until blended. Allow the mixture to set in the fridge for about an hour.

To make the white chocolate shell, blend the cacao butter, cashew butter, vanilla extract, salt, maple syrup, and matcha until smooth. For best results, wait until all ingredients have come to room temperature before processing and avoid over-blending.

Line a cupcake pan with cupcake liners (as many as however many cups you intend to make) and distribute half of the white chocolate mixture evenly among the liners. Place the pan in the fridge for 10 minutes. Next, add 1 teaspoon of raspberry jam to the center of each cup and fill the liners up the rest of the way with the white chocolate mixture.

Let the cups set in the fridge for at least an hour. Serve and enjoy!
