Ingredients

Ginger Simple Syrup

  • 3/4 cup water
  • 1 cup sugar
  • 1 cup peeled and sliced fresh ginger

Cocktail

  • 1 rounded tsp loose leaf or 1 sachet/bag. We recommend using Illumination Yaupon by YAYAYA Yaupon
  • 1 cup filtered water
  • 1oz Ginger simple syrup
  • 1 tablespoon freshly squeezed lime juice
  • 2 oz Spiced rum
  • Ice cubes

How to make Spiced Rum Tea

Ginger Simple Syrup

Add sugar and water to a saucepan and bring to a simmer on medium-low heat, stirring constantly until the sugar dissolves. Then add in the ginger, cover, and simmer for 15 minutes. Remove from heat and let infuse for 30 minutes to 1 hour, depending on how gingery you’d like your syrup. The syrup will keep in the refrigerator in an airtight container (mason jars work well) for up to one week!

Cocktail

Heat the water to 212°F and steep the yaupon tea for 5 minutes. Remove tea and set aside to cool to room temperature (about 15 minutes). In a cocktail shaker, combine the ginger simple syrup, lime juice, spiced rum, 4 oz of the yaupon tea and a handful of ice cubes. Shake it up well (about 10 seconds). Serve over ice and garnish with a piece of candied ginger. Enjoy this spiked rum with tea!
