This jam strikes the perfect balance between sweet and savory! Nazanin from Tea Thoughts infused raspberries with pu'er to create a rich, summery flavor. The West China Tea Company's Rain Butter Pu'er has notes of macadamia and hazelnuts that pair nicely with the fruity tartness of the raspberries.

By Tea Thoughts
Ingredients
- 1-2 tbsp West China Tea Company Rain Butter Pu'er
- 3 cups water
- 12 oz. raspberries
- 1-2 tbsp lemon juice
- 1/4 - 1/2 cup sugar (depending on desired sweetness)
Directions
Brew tea in 3 cups of water and set aside 1 cup of brewed tea. Mash the raspberries. In a medium saucepan, add in the mashed raspberries and cup of brewed tea. Simmer on medium heat for several minutes, stirring often.
Add in the sugar and lemon juice. Keep simmering and stirring until the sugar has dissolved, the majority of the water has disappeared, and the jam has increased in size.
Let the jam cool and store in a mason jar. Enjoy!
