Pineapple Coconut Riptide

Pineapple Coconut Riptide from Sips by

Gear up for summer with this tropical fruity drink that, you may or may not have already guessed, is a piña colada with just a dash of black tea. The winning combination of pineapple and coconut is grounded by the black tea, creating a revitalizing and unique refreshment that’s unlike any other piña colada you’ve had before. PINEAPPLE COCONUT RIPTIDE

Makes 1 glass // Prep Time: 5 minutes // Active Time: 5 minutes

Ingredients

  • 1 rounded tsp loose leaf or 1 sachet/bag black tea
  • 1 cup filtered water
  • 2 oz light rum
  • 2 oz pineapple juice
  • 1 1/2 oz cream of coconut
  • Whipped cream for topping (optional)
  • Pineapple wedge and maraschino cherry for garnish

Directions

Heat the water to around 212°F and steep tea for 3-5 minutes. Remove (strain) tea and let cool to room temperature (about 15 minutes). You can also add ice to your tea here to help it cool down faster!

In a cocktail shaker combine 2-4 oz of the black tea, rum, pineapple juice, and cream of coconut, with a handful of ice cubes and shake well (about 15-20 seconds). Strain into a tall cocktail glass, top with whipped cream, and garnish with a pineapple wedge and maraschino cherry. Enjoy!
