How to make Iced Mojito Tea
Mojito Simple Syrup: Heat the water in a saucepan and stir the mojito tea leaves throughout until the water is light brown and comes to a boil. Add the sugar and stir until the sugar dissolves. Add the zest from 1 lime and the juice of 1/2 lime to the syrup. Then, remove from heat and allow the syrup to cool fully. Strain the syrup and store in a glass jar.
Mojito tea: Muddle the mint leaves and remaining 1/2 lime together in a shaker with 1 tbsp of the simple syrup. Fill the shaker about 3/4 of the way full with ice, add the rum, and shake vigorously for 12 seconds. Strain into your glass over fresh ice. If you've muddled enough, you should see mint leaves scattered throughout the glass. Add more syrup or adjust proportions to your preference.
