Lemongrass Citrus Fizz

This delicate and herby cocktail is sure to lift your spirits as a pick-me-up after work this summer. It’s a little bit tart from the lemongrass and lime, a little bit zesty from the Thai basil, and a little bit of a perfect mix!

Lemongrass Citrus Fizz

Makes 4-6 glasses // Prep Time: 2 hours // Active Time: 10 minutes

Ingredients

  • 1 Teatulia Lemongrass sachet
  • 2 stalks of lemongrass (chopped into 1-inch pieces)
  • A few sprigs (3-6) of fresh Thai basil (aka pepper basil)
  • 2 limes (sliced into 8 wedges total)
  • ¼ cup sugar or 2 tbsp honey
  • Sugar or honey for serving
  • 1 cup filtered water
  • 12 oz white rum
  • Club soda
  • Ice for serving

Directions

First we have to make the lemongrass simple syrup…In a mixing bowl, mash the chopped lemongrass with a wooden spoon (or you can use a mortar and pestle). Combine the bruised lemongrass, water, sugar/honey, and Teatulia Lemongrass tea bag in a small saucepan and bring to a boil, then reduce heat and simmer for 2 minutes. Remove from heat and let cool/infuse for about 2 hours.

After the syrup’s well infused, strain through a mesh strainer, pressing down on the chopped lemongrass to get all the nice flavors out. Place it back in the refrigerator until we’re ready to add it to the cocktails. The strained syrup will keep in the fridge for up to two weeks!

For the cocktails, get those glasses out and combine in each glass: ½ tsp sugar/honey, a lime wedge, and a handful of Thai basil leaves and muddle together. Then add 2 oz of rum and 2 oz of lemongrass syrup to each glass, top with ice and club soda, give them a stir, and garnish with lime wedges.
