Lemon Lavender Chamomile Breeze

This floral cocktail is a wonderful way to welcome in spring and the change of weather. You can even make floral ice cubes with our easy tutorial - Floral Tea Ice Cubes - as a fun craft project to take these beverages up a notch! The fusion of chamomile and lavender pairs exceedingly well with the light lemon and honey notes of this beverage. Serve these up for your next Spring themed celebration this season!


Makes 1 glass // Prep Time: 10 minutes // Active Time: 5 minutes


Honey-Lavender Simple Syrup

  • 1 cup filtered water
  • 2/3 cup honey
  • 3 tbsp fresh or dried lavender flowers


  • 1 rounded tsp loose leaf or 1 sachet/bag chamomile tea
  • 1 cup filtered water
  • 2 oz cognac
  • 1 oz freshly squeezed lemon juice
  • 1 oz honey-lavender simple syrup
  • A sprig of fresh or dried lavender
  • Ice cubes


Honey-Lavender Simple Syrup

Bring the water and lavender flowers to a boil in a small saucepan. Stir in honey and let dissolve. Then reduce heat to simmer for 15 minutes. Remove from heat to cool, cover, and let infuse for 1 hour. Pour syrup by straining out the lavender into a sealable jar (mason jars work well) and store in the refrigerator for up to 2 weeks!


Heat the water to around 200°F-212°F (boiling is fine) and steep tea for 5-10 minutes. Remove (strain) tea and let cool to room temperature (about 15 minutes).

In a cocktail shaker, combine the cognac, lemon juice, honey-lavender simple syrup and handful of ice cubes and shake for about 10-15 seconds. In a cocktail glass, add ina handful of ice cubes, pour the tea over the ice cubes, and then add in the shaken cocktail to to the tea. Stir gently, garnish with the lavender sprig, and enjoy!
