This recipe from DAVIDsTEA is pretty hard to beet! It's a beet-and-spinach superfood salad that's both healthy and delicious. But the star of the dish is homemade tea-infused dressing: with beetroot, apple, berry, and energizing green maté, DAVIDsTEA Just Beet It tea is a beautiful addition to a classic French vinaigrette - especially when combined with dark honey and tangy balsamic vinegar.
Just Beet It Salad
Prep Time: 10 minutes // Active Time: 5 minutes
- 2 Perfect Spoonfuls of DAVIDsTEA Just Beet It tea
- ½ cup hot water
- 2 beets, thinly sliced (for the salad)
- goat or feta cheese
- caramelized pepitas or walnuts (optional)
- 2 tbsp balsamic vinegar
- 4 tbsp brewed tea
- 1 tbsp thinly chopped shallots
- ½ tsp dark honey
- 6 tbsp olive oil
- salt and pepper
Brew tea in hot water for 5 minutes, then strain into a measuring cup and discard tea leaves. Let tea cool to room temperature.
In a small bowl, whisk together 4 tbsp (1 ½ oz) of brewed tea, balsamic vinegar, chopped shallots, dark honey and olive oil. Then season with salt and pepper to taste.
In a salad bowl, combine baby spinach, beets and goat cheese. Top with caramelized pepitas, cheese and as much salad dressing as you like.
