Hibiscus Highball

Close your eyes while you're sipping on this revitalizing brew and guaranteed you'll be transported to the Caribbean! With the taste of cold brewed hibiscus complemented by lemon juice, your favorite type of alcohol, and topped with club soda - this drink will have you daydreaming that your toes are in the sand and you're soaking up that sweet sea breeze. Stir up one of these simple cocktails and allow yourself to slip away to paradise!

Hibiscus Highball

Makes 4 glasses // Prep Time: 4 hours // Active Time: 10 minutes


  • 4 tea bags (or 4 tbsp loose leaf) hibiscus tea
  • 4 cups filtered water
  • 4 tbsp freshly squeezed lemon juice
  • 1 cup (8 oz) gin, vodka, or white rum
  • 1 ½ cups (12 oz) club soda
  • Ice for serving
  • Mint sprigs for garnish (if you like)


In a large pitcher, pour cold water over tea bags or leaves and let steep in the refrigerator for 4+ hours. You can even leave the tea overnight for a stronger brew!

After the tea has steeped a good while, remove the tea bags or leaves (if it's loose leaf, strain the tea). If your pitcher is large enough, add in the lemon juice and alcohol of choice (you may need to transfer over to a larger pitcher).

Serve over ice, top with club soda, garnish with mint, and enjoy a little taste of the tropics :)
