A holiday party isn't complete without a hearty roast. Try this flavorful black tea brine the next time you're roasting chicken! It strikes the ideal balance between sweet and savory, leaving you with perfectly tender, juicy, and tasty chicken. Read along to discover the best brined chicken recipe.

Black Tea Chicken Brine

Makes about 4 cups

Ingredients

  • 4 tsp English Breakfast Tea. We recommend using Ahmad Tea's English Breakfast black tea
  • 4 cups water
  • 4 (2-inch) sices of lemon peel
  • 1/3 cup granulated sugar or 1/4 cup honey
  • 1 tsp coarse sea salt
  • juice of a lemon

How to make Chicken Brine

In a pot, bring the water to a boil and add in the tea and lemon peel. Turn off the heat, cover the pot, and allow the tea to steep for 8-10 minutes.

Strain the tea into a bowl and stir in the sugar and salt. Let the brine cool to room temperature and then mix in the lemon juice.

This quantity of brine is perfect for a 3 lb chicken. We recommend marinating the chicken for 24 hours, then removing it from the brine and slow roasting it at 250°F for 3 hours. You can increase the heat or broil at the very end of the roasting time to brown the skin. Enjoy the best tea-brined chicken!
