Wow your holiday guests with tasty chai poached fruits! This sophisticated dessert brings together spicy, flavorful chai and sweet fruits. The poaching process infuses the fruits with tea, making every bite one to savor!
Chai Poached Apricots+Plums
Makes 16 cups
- 2 teabags OR 2 tbsp loose-leaf masala chai
- 3 cups water
- 1/2 vanilla bean
- 1/2 cup sugar
- 6 oz. dried apricots
- 6 oz. dried plums
In a large pot, combine the sugar and water. Split the vanilla bean and scrape its seeds into the pot. Bring the water to a boil and then add in the tea, apricots, and plums. If you are using tea bags, add them directly into the water. If you are using loose-leaf tea, place the leaves into disposable tea bags before adding them to the water.
Continue boiling the fruit for 6-8 minutes. Then, remove the pot from heat and allow the tea to steep into the fruit blend for another 15 minutes. Discard the tea bags and transfer the contents of the pot to a bowl. Allow the poached fruit to cool before serving.
This poached fruit is delicious eaten by itself, over ice cream, or accompanied by meats and cheeses. Enjoy!
