Toeing the line between sweet and tangy has never been so delicious! Nibble on one of these bright, succulent grapefruit pops, blended with rich white chocolate and infused with grapefruit flavored tea.
White Chocolate Citrus Popsicles
Makes 10 popsicles
Ingredients
- 1 tsp grapefruit flavored loose leaf tea
- 1 cup water
- 1 1/2 cups pink grapefruit juice
- 1 can (13.5 oz.) full fat coconut milk
- 1/2 cup honey (or desired sweetener)
- pinch of salt
- 1 tsp vanilla bean paste
- 1/2 cup + 4 tbsp white chocolate, melted
- 1 tsp coconut oil
Directions
Brew 1 cup of grapefruit flavored tea. In a blender or food processor, combine the brewed tea, grapefruit juice, coconut milk, honey/sweetener, salt, vanilla bean paste, and 1/2 cup of the melted white chocolate. Mix until very smooth and chill the mixture for 2 hours in the refrigerator.
Fill your popsicle molds with the chilled mixture, leaving a 1/2-inch of space at the top of each mold. If you need to insert popsicle sticks into the pops, freeze for about an hour and then insert the sticks. Freeze the popsicles overnight, or until frozen solid. To release the popsicles, let them stand at room temperature for 5 minutes. Carefully remove them from the molds and place on a parchment lined baking sheet to prevent sticking. Freeze the popsicles for 2 hours to prepare them for the drizzle.
For the white chocolate drizzle, combine the remaining 4 tbsp of white chocolate and coconut oil in a microwave-safe bowl. Microwave the mixture on high for 30 seconds, then stir to combine. Continue microwaving and stirring in 15 second intervals until the mixture is completely melted and smooth. Let cool to room temperature and then drizzle generously over the popsicles.
Freeze the popsicles again for 20 minutes and then serve immediately. Enjoy!
