Summer is sweet, juicy watermelon season. Known as the body-healing fruit, watermelon is mega-hydrating and chock-full of restorative nutrients and minerals. You can get all of these benefits (and more!) from these tasty popsicles, made with fresh watermelon and black tea.
Watermelon Lemon Popsicles
Makes 8 popsicles
- 2 tsp black loose leaf tea
- 2 cups water
- 2-3 tbsp honey
- 2 cups cubed watermelon
- 2 tbsp fresh squeezed lemon juice
Brew 2 cups of black tea and strain. Add in the honey, if extra sweetness is desired, and lemon juice and stir until everything is dissolved.
Add the cubed watermelon to a blender and puree until it is very smooth. If you wish to remove the watermelon pulp and seeds, pour the pureed watermelon through a strainer or sieve. Combine the tea and watermelon puree and mix well.
Pour the mixture into your popsicle molds and freeze for at least four hours, or until frozen solid. When you're ready to serve, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
