Watermelon Hibiscus Popsicles

These popsicles may seem like traditional watermelon popsicles, but they're actually hiding a secret flavor: Hibiscus! Infused with hibiscus herbal tea, these treats are deliciously unexpected. Fresh, bright, and toeing the line between tart and sweet - you won't be able to put them down!

Watermelon Hibiscus Popsicles

Makes 8 popsicles

Ingredients

  • 2 sachets or 2tsp of hibiscus tea
  • 1 cup water
  • 2 1/2 cups fresh watermelon, cubed
  • 1/4 cup honey
  • 1 tbsp lemon juice
  • 1/4 cup fresh blueberries (optional)

Directions

Steep 2 sachets of hibiscus tea in 1 cup of boiling water for 5-6 minutes and let cool.

Add the cubed watermelon to a blender and puree until smooth. Strain the watermelon through a fine sieve. You should end up with around 1 1/2 cups of watermelon juice.

Combine the watermelon juice with the brewed tea, honey, and lemon juice. Mix well and pour into your popsicle molds. If you want an extra crunch, add 5-6 blueberries to each mold. Freeze the popsicles for at least 5 hours, or until completely solid.

When you're ready to serve, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
