Sweet Tea Peach Popsicles

When the hot weather sets in, so do the cravings for something cold and sweet. Satisfy those cravings and still look your summer best with these low-calorie, highly delicious treats. Made with a savory black tea, Catspring Yaupon Dark Roast, and fresh yellow peaches, these popsicles are sure to please!

Sweet Tea Peach Popsicles

Makes 6 popsicles

Ingredients

  • 1 sachet Catspring Yaupon Dark Roast
  • 1 cup plain, unsweetened almond milk
  • 1 pound ripe yellow peaches
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Directions

Bring a pot of water to a simmer. Cut a shallow 'X' shape into the bottoms of all of the peaches and place them in the simmering water for about 30 seconds. This is just enough time to loosen their skin. Remove the peaches from the water and let them cool enough to handle. Peel off the skins, remove their pits, and cut them into wedges.

In a small saucepan, bring the almond milk to a boil. Immediately remove the almond milk from heat and drop in the Catspring Yaupon sachet. Let it steep for 5 minutes and then remove the tea bag, pressing it firmly between your fingers to drain all of the liquid back into the saucepan of infused almond milk.

Add the infused almond milk, sliced peaches, honey, and vanilla extract to a blender. Puulse until very smooth and divide the mixture evenly into your popsicle molds. Freeze the popsicles for at least 4 hours, or until they're completely frozen.

When you're ready to serve, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
