These aromatic pops have all the flavor of a white earl grey tea, with an Eastern twist. Cardamom and pistachio add depth of flavor and make eating these popsicles a truly delicious experience.

Spiced Pistachio Popsicles

Makes 10-12 popsicles

Ingredients

  • 2 sachets white earl grey tea
  • 12 oz. evaporated milk
  • 1/2 tsp ground cardamom
  • 14 oz. sweetened condensed milk
  • 1 cup heavy cream
  • 1/4 cup pistachios, roasted and salted

Directions

In a small saucepan, heat the evaporated milk until small bubbles form around the edges. Drop the white earl grey tea sachets into the milk and bring it to a simmer. Let the tea steep for 30 minutes, then discard the sachets.

Let the infused evaporated milk cool. Whisk in the ground cardamom, sweetened condensed milk, and heavy cream.

Pulse the pistachios in a food processor or blender, or chop them by hand, until you have roughly chopped nuts. Pistachio bits of different sizes make the popsicles more interesting, so leave some bits smaller and some larger.

Divide the pistachios evenly among the popsicle molds. Pour the milk mixture on top of the nuts and freeze until solid. Enjoy!
