These pops are vegan, gluten-free, and pack an antioxidant punch! Made with matcha and fresh mango, these treats are the perfect energizing and guilt-free summer snack.
Mango Matcha Popsicles
Makes 6 popsicles
- 1 tsp your favorite matcha green tea powder!
- 1 cup full fat coconut milk
- 2-3 tsp agave nectar
- 1 cup fresh mango, cubed
- juice of 1/2 lemon
Add 2/3 cup coconut milk, matcha powder, and agave nectar to a blender and pulse until very smooth. Divide this mixture evenly between your popsicle molds. Place the molds in the freezer to set briefly while you prepare the next layer. This will help form two distinct layers that don’t run together.
Next, add the mango, remaining 1/3 cup coconut milk, and lemon juice to the blender. Pulse until creamy, smooth, and well combined. Evenly divide and pour the mango mixture over the green tea layer of each popsicle. Tap the molds to remove air bubbles and insert popsicles sticks. Freeze for at least four hours or until completely solid.
Once set, remove the popsicles from the molds and enjoy!
