Honey Peach Popsicles

Summertime is the season for sweet, ripe, juicy peaches. With the help of Rishi Peach Nectar, we're taking that goodness and putting it into cold, creamy popsicles. Honey compliments the fruitiness of these delicious treats and adds the sweetness that makes these pops perfect for dessert on a warm day.

Honey Peach Popsicles

Makes 8 popsicles

Ingredients

  • 1 bag Rishi Peach Nectar
  • 1 cup water
  • 1 lb ripe peaches (about 3 medium), peeled and sliced into ½-inch wide wedges
  • 6 tbsp honey, divided
  • dash sea salt
  • 1 cup plain full fat greek yogurt
  • 1 cup full fat coconut milk
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

Directions

Preheat oven to 350 degrees Fahrenheit. Brew 1 cup of Rishi Peach Nectar and set aside.

Line a rimmed baking sheet with parchment paper. Transfer sliced peaches to the baking sheet and gently toss with 2 tbsp honey and salt. Arrange the peaches in a single layer, making sure that none are touching. Roast for 30 to 40 minutes, stirring halfway, or until the peaches are soft and juicy (watch the edges in particular).

While the fruit is roasting, combine the brewed tea, yogurt, coconut milk, remaining ¼ cup honey, lemon juice, and vanilla extract in a medium bowl. Mix well and place in the refrigerator so it stays cool.

Let the peaches cool and then transfer the peaches and all of their juices to the bowl with the yogurt mixture. Gently fold the mixture together, breaking up the peaches to your preferred size.

Spoon the peach/yogurt blend into your popsicle mold. Insert popsicle sticks and freeze for at least four hours, or until solid.

When you’re ready to serve the popsicles, run warm water around the outsides of the molds for about ten seconds and gently remove the popsicles. Serve immediately and enjoy!
