These vegan, high-octane popsicles are the perfect combination of sweet and tart. The intense Assam back tea flavor and fruitiness of the cherries give these pops a caffeinated zing! Try them out if you need an afternoon pick-me-up, an energizing snack, or just want to nibble on a delicious treat.





Energy Assam Cherry Popsicles
Makes 8 popsicles
Ingredients
- 4 tbsp loose leaf assam black tea
- 2 1/2 cups coconut milk + another 1/2 cup full fat coconut milk
- 3 tbsp corn starch
- 1 cup black cherries or sour cherry preserves
- 6 tbsp-1/2 cup sweetened condensed milk
Directions
Grind the tea leaves in a spice grinder until they become a finely ground powder. Add the tea powder and 2/12 cups of coconut milk into a pot and set it over medium heat. Bring the coconut milk up to a very gentle simmer and then immediately remove from heat (be very careful that the milk does not get any hotter!).
Let the tea steep for 1 minute in the hot milk and then strain the tea-infused milk through a fine sieve into another pot. In a separate bowl, whisk the cornstarch together with the remaining 1/2 cup of coconut milk and then whisk it into the strained tea-infused milk until it thickens slightly.
Next, whisk in the cherries or cherry preserves and your desired amount of sweetened condensed milk until everything is even and well combined. If you want a more tart and refreshing popsicle, use less condensed milk. If you prefer a richer, creamier popsicle, use more condensed milk.
Divide the mixture evenly among the popsicle molds and freeze the popsicles for at least four hours, or until frozen solid. When you're ready to serve, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
