These delightful popsicles are inspired by Purple Cow milkshakes and grape soda in the summertime. These treats aren't your typical grape popsicle. Blended with Zest Tea Blue Lady Black and coconut milk, they're fruity, creamy, sweet, and savory all at the same time!
Creamy Coconut-Grape Popsicles
Makes 8 popsicles
Ingredients
- 1 sachet Zest Tea Blue Lady Black
- 1/2 cup water
- 1 cup grape juice
- 1 1/2 cups coconut milk
- 1/2 cup cashew milk
- 2-3 tbsp honey
- Fresh grapes (optional)
Directions
Using 1 sachet, brew 1/2 cup of Zest Tea Blue Lady Black and let cool.
Add 1/4 cup of brewed tea, 1 cup of grape juice, and 1/2 cup of coconut milk to a blender, pulse until well combined, and set aside. This is the grape mixture.
Next, add the remaining 1/4 cup of brewed tea, 1 cup of coconut milk, 1/2 cup of cashew milk, and honey (to taste) to a blender and pulse until smooth and well blended. This is the cream mixture.
Fill each popsicle mold halfway with the cream mixture and freeze for about an hour. Once the cream mixture has been in the freezer for an hour, warm up the grape mixture to around 95 degrees and fill the molds to the top with it. Warming the grape mixture creates a blended effect throughout the popsicles. You can also add a few fresh grapes the the very tops of each mold for an extra crunch, if desired.
Freeze the popsicles again for at least four hours, or until they're completely frozen. When you're ready to serve them, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
