With the rainbow sprinkles and hot pink drizzle, these mini popsicles are downright adorable. We blended them with Pinky Up Confetti Cake to intensify that classic, delicious vanilla cake flavor! Whip these up for your next summer birthday party as a lighter take on a slice of birthday cake.
Confetti Cake Batter Popsicles
Makes 12 popsicles
- 1 tsp Pinky Up Confetti Cake
- 1 cup water
- 1 1/2 cup lowfat vanilla yogurt
- 2/3 cup heavy whipping cream
- 2 1/2 tsp butter emulsion (extract)
- 1/2 cup pink candy melts
- rainbow sprinkles
Brew 1 cup of Pinky Up Confetti Cake, strain, and let cool.
In a small bowl, whip the heavy cream until you form stiff peaks. Add in the yogurt, butter emulsion, and brewed tea and mix well. Next, drop a few sprinkles into each empty popsicle mold and then fill the molds with the yogurt mixture.
Freeze the popsicles for at least 6 hours, or overnight. Once the popsicles are completely set, remove them from the molds and drizzle them with a spoonful of melted pink candy melts. Garnish with more sprinkles and enjoy!
