Warm, crumbly apple pie with sweet vanilla bean ice cream is one of the ultimate comfort foods. We put a healthy, summertime spin on this long-time favorite by turning it into popsicles! Indulge in these treats, made with ripe apples and Zest Tea Apple Cinnamon black tea, without breaking the calorie bank. Give them a try!

Cinnamon Apple Pie Popsicles

Makes 12 popsicles

Ingredients

  • 1 sachet Zest Tea Apple Cinnamon
  • 1 cup water
  • 2 large apples, peeled and sliced
  • 1 can full fat coconut milk, chilled
  • 1 cup apple juice
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp brown sugar
  • graham cracker crumbs

Directions

Brew 1 cup of Zest Tea Apple Cinnamon and strain.

Steam the apple slices in a microwave or on a stovetop until they are soft and mushy. Add the steamed apples to a blender and puree. Add the brewed tea, chilled coconut milk, apple juice, vanilla extract, cinnamon, and brown sugar and pulse again until everything is well combined and very smooth.

Fill each popsicle mold halfway with this mixture. Then, add a layer of graham cracker crumbs to each mold. Fill each mold up the rest of the way with the apple mixture and add a few more graham cracker crumbs to the top of each mold if you like.

Freeze the popsicles for at least four hours, or until frozen solid. When you're ready to serve, run the molds under warm water to loosen the popsicles. Serve immediately and enjoy!
