Raspberry Thyme Gin & Tonic

This cocktail is tangy, herby, and downright delightful. Making tea flavored simple syrup is a fantastic way to add a different twist to any classic cocktail. This recipe boasts a raspeberry and rosehip tea simple syrup to add a lightly tart tone to this tonic. The fresh raspberries are complemented perfectly by the thyme and gin for a fullbodied concoction that tastes like it was made at a swanky downtown bar. Stay classy and sip away, #sipsbabes!

Raspberry Thyme Gin & Tonic

Makes 4 glasses // Prep Time: 20 minutes // Active Time: 10 minutes

Ingredients

Raspberry Rosehip Tea Syrup

Cocktails

  • 1 cup fresh raspberries
  • ½ cup fresh thyme (unstripped and packed)
  • 4 tbsp tea syrup
  • 1 tbsp freshly squeezed lemon (or lime) juice
  • 1 cup (8 oz) gin
  • 1 ½ cup club soda
  • Ice for serving
  • A few thyme sprigs for garnish

Directions

Raspberry Rosehip Tea Syrup

Bring water to a boil and add the tea leaves and honey/sugar. Reduce heat and simmer for 2 minutes. Then remove from heat, let cool, and place in fridge for 15 minutes to cool.

Cocktails

In a cocktail mixer (or large mixing glass) combine the raspberries, fresh thyme, lemon/lime juice, and tea syrup and muddle together.

Next, strain mixture into pitcher while pressing on raspberries and thyme to extract maximum flavor. Then add in the gin and club soda and stir gently.

Serve over ice, garnish with thyme, and have a good time :)
