These bite-sized balls are mouthwatering little snacks full of energy and nutrients! And the best part? They're super quick and easy to make. Sarah Scarborough from Nomadic Tea Party pairs these bliss balls with a tall glass of iced Catspring Green Yaupon. This combo is fresh and rejuvenating!

Lemon Goji Bliss Balls

Ingredients

  • Catspring Green Yaupon teabag
  • 1/2 cup raw cashews
  • 1/2 cup dried Turkish apricots
  • 1 tbsp maple syrup
  • 1 tsp honey
  • 1 tbsp lemon juice
  • pinch sea salt
  • zest of 1/2 lemon 
  • 2 lemon slices
  • 4 oz. water
  • ice cubes

Directions

Lemon Goji Bliss Balls: In a food processor, combine the cashews, apricots, maple syrup, honey, lemon juice, sea salt, and lemon zest. The mixture should feel like dough. Roll into tablespoon sized balls.

Iced Green Yaupon Tea: Steep the teabag and 1 lemon slice in 4 ounces of boiling water for 4 minutes. Remove the teabag and add 2 ice cubes. Once they are melted, pour the steeped Yaupon tea over a tall glass filled with ice. Garnish with a lemon slice and serve with Lemon Goji Bliss Balls. Enjoy!
