Jasmine Tomato Soup

Hot tomato soup is the perfect savory dish to whip up when it's cold or raining outside. Take your tomato soup up a notch by infusing it with the delicious and aromatic taste of jasmine. Adding tea to your soup gives it unparalleled body and depth. You've got to give this a try!

Jasmine Tomato Soup

Makes 4 servings

Ingredients

  • 2 cups brewed jasmine tea (suggestion: Asheville Tea Co Jasmine Gold)
  • 6 large tomatoes
  • 1 sprig thyme
  • 1 tbsp tabasco
  • 1 tbsp truffle oil
  • 2 tsp garlic powder
  • salt (to taste)
  • pepper (to taste)
  • fresh herbs (for garnish)

Directions

Bring a pot of water to a boil and drop the tomatoes in for about 1 minutes. Remove the tomatoes from the water and peel them. Then, puree the peeled tomatoes in a food processor until smooth. Strain the puree to remove any seeds and set aside.

Combine the tomato puree with 2 cups of jasmine tea in a large pot. This can be any type of tea (herbal, green, white, etc) with a distinct jasmine flavor/aroma. Bring the mixture to a simmer over low heat and drop in the sprig of thyme. Season the soup with the garlic powder and salt/pepper to your taste. Stir in the tabasco and let the soup simmer for 10 minutes.

Remove the pot from heat and discard the sprig of thyme. To serve, ladle the soup into bowls, drizzle with truffle oil, and garnish with your favorite fresh herbs. We recommend enjoying this soup with a side of garlic bread!
