Thick and creamy meets cool and light with these sweet pops. Avocado, fresh coconut, and Pinky Up Coconut Creme give these popsicles their soft texture and coconut flavor. Give them a try!
Avo-Coconut Lime Popsicles
Makes 12 popsicles
Ingredients
- 1 tsp Pinky Up Coconut Creme
- 1 cup water
- 2 young coconuts, meat scraped out and water reserved
- Juice from 3 small limes
- 1 small avocado
- 3 tablespoons dried coconut
- 1-2 tbsp maple syrup (optional)
Directions
Using a loose leaf tea guide, brew 1 cup of Coconut Creme Tea. Using a blender, combine the coconut meat, coconut milk, lime juice, brewed tea, and maple syrup, if desired, until very smooth.
Transfer 3/4 of the mixture into a container that pours easily that pours easily. Stir in the dried coconut. Then, add the avocado to the remaining mixture in the blender and blend until smooth.
Fill the popsicle molds 1/3 of the way full with the avocado mixture to create a green layer. Place the popsicles into the freezer for about 10-15 minutes. The mixture should not freeze, but just stiffen up a bit.
Remove the molds from the freezer and fill each mold to the top with the white coconut mixture. Freeze overnight and serve when frozen all the way through. Enjoy!
